Herman's is still the best if you get there when they are not busy (tough) and take the time to talk. Ask anyone in the store about the cuts and sources you are looking for. They can also source unusual vegatables and fruits through their supplier. Want something aged a particular way? They can do that too.
I'm also a fan of Haldas. Its worth the visit if you're in N. Wilmington. But if you get to know the folks at the New Castle County Farmers Market, they should be able to source just about anything you want.

My favorite is Haldas, near Branmar Plaza, but that's probably a hike from Bear or New Castle. I do also like Papa's in Wilmington's Little Italy. It's a grocery store, but a very small one, and the owner is also the butcher - he's a *great* guy, and will load you down with a taste of everything if you tell him it's your first time there.

I'm looking for a butcher shop... I've been to Herman's -- it was a while back, but I'm looking for a reasonably priced butcher where I can source different meats and things I can't necessarily find in the megamarket like veal bones and salt pork.
I use either Papa's or Haldas Meats. It's also been my experience that Papa's has always been very fair in their pricing.
